Spaghetti Bolognese

Ingredients

  • 200 g wholewheat spaghetti
  • ½ cup mixed vegetables
  • ½ cup onion, chopped
  • ½ tsp garlic, crushed
  • 60 g lean ground beef
  • 1 tsp oil
  • 1 tsp low-fat cottage cheese
  • Salt and pepper
  • Boiled water
  • Parmesan Cheese

Directions

  1. Boil spaghetti ‘al dente’, strain and set aside.
  2. While paste boils, sauté onion and garlic in oil.
  3. Add ground beef.
  4. Season with salt and pepper.
  5. Add vegetables.
  6. Add boiled water as needed and allow to simmer.
  7. Stir in cottage cheese.
  8. Serve spaghetti with sauce on top.
  9. Garnish with a little parmesan as desired.
